Spiced Toasted Muesli

My go-to meusli recipe. We top everything with it; breakfast bowls, soy ice cream, almond butter banana toast, pretty much anything that would benefit from a little crunch. I don't care for things to be too sweet, feel free to adjust to your liking. There is much room to swap things out and play around here! I'll give you my formula, but if you have a favorite nut/dried berry/oil/sweetener you want to use, go for it! Raw dried coconut shavings are incredible in this, though I was out for this batch. If the berries are mixed in at the beginning and go into the oven with everything else, they plump up, burst, their sugars burn and harden, leaving the entire pan a mess to scrub off, and hold precious muesli morsels captive. Thus, I mix them in at the end, when the oats have cooled.

 Ready to go into the oven! Be sure to turn every 10-15 minutes! Once you smell it, turn it.

Spiced Toasted Muesli 

4 c organic rolled oats

1 c walnuts, broken into pieces

1/2 c unsweetened dried cranberries

3 tbsp organic coconut oil

1.5 tbsp dark brown sugar

1 tbsp cinnamon

1 tbsp chia seeds

1 big pinch of kosher salt

3 drops DoTERRA Wild Orange essential oil (optional)

1 drop DoTERRA Cinnamon Bark essential oil (optional)

15"x10" nonstick baking sheet (mixture will need to be turned 1-2 more times in oven) or 2 smaller nonstick baking sheets (what I usually opt for)

Preheat oven to 325°F. In a large bowl, combine all but the dried berries. If using parchment, cut, and place in baking sheet or sheets. Spread the oats evenly over one large or two smaller baking sheets. Place in oven off-width of each other so heat distributes evenly. Bake 10-15 minutes, turn with a spoon, and return to oven for another 10-15 minutes. Repeat, if using only one large baking sheet. Take out of the oven when the oats are a golden brown, allow to cool, turning once or twice to speed up the process. Allow 20 minutes to cool completely, place in a large canister or air tight tupperware. Makes 5 cups.
