Berry Morning Chia Bowls
I love a good breakfast bowl. Who doesn't? They're super trendy right now, and for good reason. This has been my go-to breakfast for around 6 months; fast, easy, and provide enough taste, texture, and nutrition to get me going, and keep me full for hours on days where I have a lot going on! I've gotten in the habit of always having a banana or two in the freezer, I never know when I'll want to blend one into a smoothie or for simple one ingredient banana ice cream (a dallop of good PB, cinnamon and some muesli?!). So the night before, you'll want to pop a peeled banana in the freezer, and then put the chia pudding to soak overnight. If you don't have chia seeds on hand, you can swap them for rolled oats. Both are high in fiber and have a very pleasant toothsome bite. Same goes with the berries, whatever frozen berries/blend you have on hand is fine. For this recipe I used the Organic Blueberry 5lb bag at Costco, they're around $8, and are always super fresh.
2 tbsp chia seeds (or 1/3c rolled oats)
1/2 c nut milk (almond, hemp, soy, cashew, coconut)
pinch of cinnamon (optional)
pinch of salt (optional)
Combine ingredients in a bowl or mason jar and let sit in the fridge overnight.
1-2 frozen banana
1 c organic frozen blueberries
splash of apple juice
small handful basil (4-6 good sized leaves)
handful of spinach (optional)
2 drops DoTERRA Pink Grapefruit essential oil (optional, makes it so creamy!)
1 drop DoTERRA Lemon essential oil (optional)
1/2 c muesli
Combine the all but the muesli in a blender or food processor, blend until smooth. I like for this to be more of a sorbet consistency, add more juice to loosen. In a mason jar or bowl, pour half of the smoothie and layer with the chia pudding, top with remaining smoothie and muesli.
I like to garnish mine with extra basil, and voila!
